A traditional holiday table wouldn't be complete without a sweet potato casserole. Perfectly flavored and topped with an irresistible pecan topping, this is the only sweet potato casserole recipe you'll ever need.

How to Make Sweet Potato Casserole

  • Cook Sweet Potatoes: Place sweet potatoes in a large pot and add enough water to the pot to cover the potatoes a little more than half way. Cover and bring to a boil, then simmer until fork tender. Drain, and place on a cutting board to cool. Once they are warm enough to handle, remove the skins and place them in a large mixing bowl.

  • Make Filling: Add eggs, evaporated milk, vanilla, sugar, salt, and butter and mash everything together until smooth. I start with a potato masher, and then use an electric mixer on low speed, for about 45 seconds, to get the mixture smooth (without over-mixing). Smooth into casserole dish.

  • Add Pecan Topping: Combine the topping ingredients– butter, chopped pecans, flour, and brown sugar–and sprinkle all over the top of your mashed sweet potato mixture.

Step-by-step Instructions

  • Bring a large pot of water to a boil. Add the sweet potatoes and cook until soft and tender, 20 to 25 minutes. Drain and let cool.

  • In the meantime, make the topping: Melt the butter in a medium bowl the microwave. (Alternatively, melt the butter in a small pan or over low heat and transfer to a medium bowl.)

  • Add the brown sugar, flour, and cinnamon.

  • Mash with a potato masher or large fork until very smooth.

  • Add the melted butter, salt, and brown sugar and nutmeg.

  • Mix well, then add the eggs.

  • Stir to combine. It’s okay if it is not completely smooth.

  • Transfer the sweet potato mixture to a 2-quart baking dish and spread evenly.

  • Sprinkle the topping evenly over the sweet potato mixture.

  • Bake for about 40 minutes, uncovered, or until the topping is nicely browned. Let cool slightly before serving.

Can You Make Sweet Potato Casserole Ahead of Time?

Yes, you can prepare this sweet potato casserole one to two days in advance. It's a great way to get a head start on Thanksgiving! To make ahead, simply prepare the filling and topping separately — but don't bake anything yet. Tightly cover the baking dish and place the topping in an airtight container. Store them both in the refrigerator until you're ready to cook.

On the big day, sprinkle the topping onto the filling and bake according to the directions (you may have to add a few minutes to the baking time to account for the cold temperature).
